Villa Staff & Meals


Casa Carole has a full-time staff of 4: Nely, the chef, who prepares 2 meals a day that you have selected from her extensive gourmet menu. Pepe, the English-speaking houseman, who serves breakfast, drinks on the deck at 4:30, and dinner, as well as any personal concierge service you may need. Rosario, the housekeeper, who cleans the villa from top to bottom each day. They are available 8 hours a day, 6 days a week, to pamper you and meet your every need from, welcoming you and helping with your bags, to arranging a taxi for your departure and anything you may need in between. We also have Crispin, the pool-man, who comes very early 3 days a week to keep the pool perfect.

A few weeks before arriving, you will receive a Guest Arrival Information form to be completed and returned or we will send you information to access our Guest Portal and you can fill the Guest Arrival Information form online. This form will provide our staff with your travel details as well as your dinner choice for your Saturday arrival. Margaritas, salsa and guacamole are available too. This form also provides our staff with the food choices you will want for Sunday when the staff are not there. The food and drink you have ordered will be waiting for you at the villa along with the first meal you have ordered.

During your stay, your personal chef Nely will prepare two outstanding meals each day which you have selected from her extensive gourmet menu. Lunches can be ordered additionally, with lunch-type food, but there is usually enough food in the refrigerator to keep everyone well fed.

To ensure that she has the freshest food available, Nely shops every day for the meals that you have selected for that day. You will be responsible for reimbursing her for the cost of the food and beverages that you have ordered. At the current low price levels, it may cost between $180 and $200 US for the food and drink you order on our Guest Arrival Information form (for Saturday & Sunday). Suggested budgeting for meals thereafter should be between $160 and $180 US a day for food and drink for a group of 8. As the week progresses, the daily food cost is reduced as Nely will already have many of the staples in stock. Nely will have receipts for the food & beverages you have ordered and you will be responsible for reimbursing her for these items. As a courtesy, please reimburse her daily in pesos.
